2 Tbsp Grape Seed Oil

4 oz Sour Cream

1 cup Horizon Organic 2% Milk

1 ¾ cup King Arthur Flour All Purpose Flour

1 cup WOODSTOCK Organic 5 Grain Cereal

1 tsp Baking Powder

1 tsp WOODSTOCK Organic Cane Sugar

½ tsp Kosher Salt

½ cup Shredded Cheddar Cheese

½ cup Diced Broccoli Florets

Dash of Salt

Dash of Black Pepper

Spray Oil

Hollandaise Sauce:
3 egg yolks

1 Tbsp Fresh Lemon Juice

½ cup Unsalted Butter

Salt to Taste

Pinch of Cayenne Pepper

  1. Preheat oven to 450* Fahrenheit and line a baking sheet with parchment paper.
  2. In a non-stick frying pan, sauté broccoli with a dash of salt and pepper, until just cooked through but not soggy. Set aside to cool.
  3. In a mixing bowl, mix together oil, milk, and sour cream until just combined.
  4. Add in flour, 5 grain cereal, baking powder, cane sugar, and salt. Mix until biscuit dough is completely combined and thick. Fold in broccoli and cheddar cheese. Let the dough rest for 10 minutes.
  5. Spray the inside of either a ½ or 1/3 measuring cup. Gently spoon the biscuit batter in and level out on top. Turn over onto the lined baking sheet, leaving 2 inches between biscuits.
  6. Bake in the oven for 12-16 minutes, or until the biscuits are golden brown and no longer look doughy.
  7. While the biscuits are baking, begin preparing the poached eggs. Fill a small saucepan halfway with water and bring to a boil. Immediately turn down heat to bring water to a very light simmer with no rolling bubbles (to about medium-low). Crack 1 egg into a small heat-safe cup. Use a spoon to lightly stir water in the pot and release egg into the water (Tip: submerging part of the cup into the water while dropping the egg will help the egg stay more together). Cook for about 4 minutes and remove with a slotted spoon. You can store eggs on a paper towel lined plate in the meantime.
  8. Now time for the easiest hollandaise sauce ever! In a small saucepan, melt butter until the edges are bubbling and foaming. Turn off heat but do not remove the pan from the burner. In a blender with a lid, combine egg yolks, lemon juice, salt, and cayenne pepper on low for about 5 seconds. Set the blender on high and very slowly pour the butter into the blender until all butter is added into the blender. The sauce should thicken and almost double in size. Tip: pour the hollandaise sauce into a heat proof glass and place in a bowl of warm water to keep warm while serving.
  9. Once biscuits are cooked, layer with desired toppings: sautéed veggies, sausage, bacon, smoked salmon, and etc. Layer on the poached egg and spoon the hollandaise sauce on top.

How Bread And Butter Pickles Got Their Name

Bread and butter pickles can most likely trace their roots back to Omar and Cora Fanning, who filed a patent for the name in 1923 (via Saveur). Omar, born in 1876, was son to Omar, a wagon maker and small-town politician, and Mary, a school teacher (via Genealogy Trails and My Heritage). Cora (born Cora A. Eades) was eight years younger than her husband (via Wiki Tree). Born in 1884 to Frederick, a hardware store owner, and Erma, Cora tragically lost her father to "heart troubles" before she turned 18. She changed her name to Fanning when she got married in 1907, at the age of 23 (via My Heritage and Wiki Tree). 

After they married, Omar and Cora took up cucumber farming. But by the 1920s, the young couple was struggling to make ends meet. They started pickling small cucumbers they would have otherwise thrown away, using an old family recipe (via Greening of Appalachia). When they couldn't generate enough income to pay for basic goods with money, they exchanged the pickles with their local grocer for... can you guess? Bread and butter (via Cooks Info). Needless to say, they were successful.

We're not sure what their original recipe called for, but we've dug up a 1945 recipe, in case you want to make them at home. All you'll need are cucumbers, onions, salt, vinegar, sugar, mustard, celery seed, ginger, and turmeric. Happy cooking!

  • 400g Lebanese or Kirby cucumber (about 6-7 small ones), cut into 1cm thick slices (available at Whole Foods or from a greengrocer)

  • 140g golden caster sugar
  • ¼ tsp ground turmeric
  • ¼ tsp celery seeds

Method

  • STEP 1

    Put the cucumbers, onion slices and salt in a sieve set over a bowl, and cover with ice and something to weigh it down. Let stand for 1-2 hrs in the fridge, then drain well. (This helps to push the water out of the cucumber, which means it will stay crunchy later when brined.)

  • STEP 2

    Meanwhile, put the vinegar, 200ml water, the sugar, turmeric, celery seeds, chilli flakes and mustard seeds in a small saucepan over a medium heat. Bring to the boil and simmer for 5 mins. Remove from the heat and leave to cool to room temperature. Put the cucumber and onion mixture in a 500ml- capacity jar or sealable plastic container, pour over the brining liquid, cover and seal. Chill for at least 3 hrs. Will keep in the fridge for 2 weeks.

This was my husband's grandmother's recipe. It is so good. Store-bought pickles don't even come close. This is a good recipe for anyone who would like to try pickling, but hasn't done it before. It's quite straight forward, not a lot of ingredients.

DIRECTIONS

  • Combine cucumbers, onions, salt and ice in a large bowl.
  • Mix well.
  • Put a weight on and allow to stand 3 hours. (For a weight, I use a plate with a gallon bottle of vinegar or water on top of it).
  • Rinse and drain thoroughly.
  • Combine vinegar, sugar, turmeric, celery seed and mustard seed in a large pot.
  • Add drained cucumbers.
  • Place pot on medium low heat.
  • Bring almost to a boil, but DO NOT ALLOW TO BOIL.
  • Remove from heat.
  • Seal in sterilized jars, 10 minutes in a hot water bath.
  • Easy way to sterilize jars: Wash them well in hot soapy water.
  • Dry them off.
  • Put on a cookie sheet, right side up, at 225°F for 15 minutes.
  • Turn off oven and leave them in there until you need them.

After they married, Omar and Cora took up cucumber farming. But by the 1920s, the young couple was struggling to make ends meet. They started pickling small cucumbers they would have otherwise thrown away, using an old family recipe (via Greening of Appalachia). When they couldn't generate enough income to pay for basic goods with money, they exchanged the pickles with their local grocer for. can you guess? We're not sure what their original recipe called for, but we've dug up a 1945 recipe, in case you want to make them at home. All you'll need are cucumbers, onions, salt, vinegar, sugar, mustard, celery seed, ginger, and turmeric. Happy cooking!

Bread and Butter Pickles

Start with the freshest pickling cucumbers you can find; your pickles are only going to be as good as the produce you start with. The fresher the cucumbers are, the crispier your pickles will be.

  • 2 1/2 pounds pickling cucumbers (fresh from the market)

  • 1/4cup pickling salt (can use kosher salt as a substitute, regular table salt has additives in it that will turn the pickles dark and muddy the color of the pickle juice)

  • 1 pound white or yellow onions, thinly sliced

  • 1 1/4cups white distilled vinegar (5% acidity)

  • 1cupapple cider vinegar (5% acidity)

  • 2 1/4cupssugar

Pickling spices:

  • 1tablespoonmustard are bread and butter pickles good for you red pepper flakes

  • 3/4teaspooncelery seeds

  • 1inchcinnamon stick

  • 6 allspice berries plus apinch of ground allspice

  • 6 wholecloves plus a pinch of ground cloves

  • 1/2teaspoonturmeric

  1. Rinse and slice the cucumbers:

    Carefully rinse the cucumbers, scrubbing away any dirt that may have stuck to the ribs. Slice off 1/8-inch from the ends and discard. Slice the cucumbers in 1/4-inch thick slices, place in a large bowl.

  2. Salt, chill, and drain the cucumber slices:

    Add the sliced onions and all of the pickling salt. Stir in so that the salt is well distributed among the cucumber slices. Cover with a clean tea towel (thin towel, not terry cloth). Cover with a couple of inches of ice.

    Put in the refrigerator and let chill for 4 hours. Discard ice. Rinse the cucumber and onion slices thoroughly, drain. Rinse and drain again.

  3. Sterilize the jars:

    If you are planning to store your pickles outside of the refrigerator for any length of time, you will need to sterilize your jars before canning, and heat the filled jars in a hot water bath after canning.

    If you are planning to eat the pickles right away and store them the whole time in the refrigerator, you can skip the water bath step. It's still a good idea to sterilize the jars first, you can do that by running them through the dishwasher, or placing them in a 200°F oven for 10 minutes.

    To sterilize the jars for canning, place empty jars on a metal rack in a large, 16-qt canning pot. (Jars must rest on a rack in the pot, not on the bottom of the pot). Fill with warm water and bring to a boil. Reduce heat to warm to keep the jars hot and ready for canning.

  4. Make pickling syrup:

    In a 4 qt or 6 qt pot, place the vinegar, sugar, and all of the pickling spices. (Do not add salt.) Bring to a boil. Once the sugar has dissolved, add the sliced cucumbers and onions. Bring to a boil again. As soon as the sugar vinegar solution begins boiling again, use a slotted spoon to start packing the hot jars with the cucumbers and onions.

  5. Pack jars, add pickling syrup:

    Pack jars to an inch from the rim with the cucumbers and onions. Then pour hot vinegar sugar syrup over them to a half inch from the rim.

    Wipe the rim clean with a paper towel. Place a sterilized lid on the jar. Secure with a metal screw band.

  6. Process in hot water bath:

    If you are planning to store pickles outside of refrigerator, you will want to process the filled jars in a hot water bath.

    Return filled jars to the same canning pot with its already hot water. Water level needs to be at least one inch above the top of the cans.

    Bring to a boil and let boil hard for 15 minutes, or 20 minutes for altitudes of 1001 to 6,000 feet. Over 6,000 feet, boil for 25 minutes. Remove jars from pot.

    Let cool down to room temperature. Jars should make a popping sound as their lids seal. If a lid doesn't properly seal, do not store the jar outside of the refrigerator.
